Instructions

Step 1. Clean and inspect the wheat berries: Pour 3.2kg of organic hard red wheat berries into a large bowl and carefully examine for any stones, chaff, or damaged kernels. Remove any debris by hand. Rinse the wheat berries in a fine mesh strainer under cold water until the water runs clear, then drain thoroughly and pat dry with clean towels.
Step 2. Set up your grain mill: If using an electric mill like the NutriMill or Wondermill, ensure it's clean and properly assembled. For hand-crank mills like the Country Living Grain Mill, secure it to a stable surface. Adjust the milling plates to the finest setting for whole wheat flour consistency.
Step 3. Mill the wheat berries in batches: Process 400-500g of wheat berries at a time to avoid overheating the mill and flour. Feed the berries slowly into the hopper, maintaining a steady pace. Fresh-ground flour should be light brown with visible bran flecks and have a sweet, nutty aroma. The entire 7 lbs should take 30-45 minutes to mill completely.
Step 4. Sift and store immediately: Pass the fresh flour through a fine mesh sieve to ensure uniform texture, though some bran pieces are expected and desired.
