Instructions

Step 1. Prepare your workspace: Line an 8x8 inch square pan with parchment paper, leaving overhang for easy removal. If your dates seem dry or hard, soak them in warm water for 10 minutes, then drain and pat completely dry - excess moisture will make your bars mushy.
Step 2. Process the cashews: In a food processor, pulse the 400g cashews for 30-45 seconds until they form a coarse meal with some small chunks remaining. Don't over-process into butter - you want texture. Transfer to a large mixing bowl.
Step 3. Process the dried fruit: Add the 250g dates to the food processor (no need to clean) and pulse until they form a sticky paste, about 60-90 seconds. Add the 120g dried apples and 100g dried blueberries, pulsing 8-10 times until chopped into small pieces but not pureed.
Step 4. Combine everything: Add the processed fruit mixture to the bowl with cashews. Drizzle in 2 teaspoons vanilla extract. Using your hands (slightly damp hands work best), mix and knead the mixture for 2-3 minutes until it holds together when squeezed. The dates should bind everything - if it's too dry, add 1 more soaked and chopped date.
Step 5. Shape and set: Transfer the mixture to your prepared pan. Using the parchment paper and your palms, press firmly and evenly to create a compact layer about 1 inch thick. Cover and refrigerate for at least 2 hours until firm.
Step 6. Cut and store: Remove from pan using parchment overhang. Using a sharp knife, cut into 20 bars (4x5 grid). Wrap each bar individually in parchment paper or store in an airtight container with parchment between layers. Each bar should weigh approximately 45g and contain about 200 calories.

Storage

Store wrapped bars in refrigerator for up to 2 weeks or freeze for up to 3 months. Bars are best enjoyed at room temperature - remove from fridge 10-15 minutes before eating for optimal texture.
