Why This Recipe is Seed Oil Free

Commercial Date Sugar often contains inflammatory seed oils like canola, soybean, or sunflower oil. This homemade version replaces them with healthier fats like butter, ghee, coconut oil, or avocado oil — giving you the same great taste without the processed oils.

Instructions

Step 1. Remove any remaining pits from the dates and inspect for quality - discard any dates with mold spots or excessive hardness. Cut each date into 4-6 smaller pieces using kitchen shears to speed dehydration and prevent your food processor from overworking later.
Step 2. Preheat your oven to the lowest setting (usually 170-200°F) or use a dehydrator set to 135°F. Arrange date pieces in a single layer on parchment-lined baking sheets, ensuring pieces don't touch. Oven method: prop the door slightly open with a wooden spoon to allow moisture to escape. Dehydrate for 8-12 hours until dates are completely crispy and snap when bent - they should sound almost glass-like when tapped together.
Step 3. Allow dehydrated dates to cool completely to room temperature (about 30 minutes). Test crispness by breaking a piece - it should snap cleanly without any bendable or chewy texture. Any remaining moisture will cause clumping in the final powder and reduce shelf life.
Step 4. Working in batches, pulse the dehydrated date pieces in a high-speed blender or food processor fitted with an S-blade. Start with 113g (1/4 of your batch) at a time to prevent overheating the motor. Pulse 10-15 times, then process continuously for 30-45 seconds until you achieve a fine, consistent powder similar to brown sugar texture.
Step 5. Sift the ground date powder through a fine mesh strainer to catch any larger pieces. Re-process any chunks that don't pass through the sifter. The final texture should be fine enough to measure easily with a spoon but still have slight texture (not powdered sugar fine). Store immediately in an airtight glass jar with a tight-fitting lid.
Step 6. Label your container with the date made and use within 6 months for best flavor. To use: substitute 2/3 cup date sugar for 1 cup regular sugar in baking recipes, or use 1 tablespoon to sweeten beverages (note that it won't fully dissolve like refined sugar). Store in a cool, dry pantry away from direct sunlight.

Storage

Store in airtight glass containers in a cool, dry pantry for up to 6 months. Date sugar may clump slightly over time due to natural moisture - break up clumps with a fork or briefly re-process if needed. Do not refrigerate as condensation will cause clumping.
