Organic rolled oats
760g (about 7.5 cups) · Bob's Red Mill Organic Old Fashioned Rolled Oats

Instructions
Step 1. Preheat your oven to 300°F (150°C) and line two large rimmed baking sheets with parchment paper. This lower temperature ensures even toasting without burning the nuts and grains. Position racks in upper and lower thirds of oven.
Step 2. In a very large mixing bowl (at least 6-quart capacity), combine the oats (760g), khorasan wheat flakes (120g), spelt flakes (120g), quinoa flakes (120g), amaranth flakes (120g), chopped almonds (190g), inulin powder (25g), cinnamon (6g), and sea salt (4g). Whisk thoroughly for 2-3 minutes to ensure even distribution — the inulin powder tends to clump, so break up any lumps with the whisk.
Step 3. In a medium saucepan over medium-low heat, warm the coconut oil (230g) until just melted — about 2-3 minutes. Remove from heat and whisk in the cane sugar (285g) until dissolved, about 1 minute. The mixture will be thick. Add the molasses (60g) and vanilla extract (10ml), whisking until smooth and glossy, about 30 seconds more.
Step 4. Pour the warm coconut oil mixture over the dry ingredients and mix thoroughly with a large wooden spoon or rubber spatula. Continue mixing for 3-4 minutes until every piece is evenly coated — the mixture should look uniformly moist and slightly sticky. If some areas appear dry, mix longer rather than adding more oil.
Step 5. Divide the mixture evenly between the two prepared baking sheets, spreading it into a single layer about 1/2-inch thick. Use the back of a measuring cup to gently press and compact the granola — this helps create clusters. Leave small gaps between clusters for air circulation.
Step 6. Bake for 45-55 minutes, stirring every 15 minutes and rotating the pans between racks. The granola is done when it's golden brown and feels dry to the touch — it will continue crisping as it cools. If some areas brown faster, stir more frequently during the last 15 minutes.
Step 7. Cool completely on the baking sheets for at least 45 minutes — this is crucial for proper clustering. The granola will be soft when hot but will crisp up as it cools. Once completely cool, break apart any large clusters by hand into bite-sized pieces.
Step 8. Only after the granola has cooled completely, open the probiotic capsules and sprinkle the powder evenly over the granola. Toss gently to distribute — heat would destroy the beneficial bacteria, which is why this step comes last. Store in airtight containers immediately after adding probiotics to maintain their viability.
Storage
Store in airtight glass containers at room temperature for up to 3 weeks. Keep probiotics viable by avoiding heat and moisture. For longer storage, freeze portions in sealed bags for up to 6 months.
