Instructions

Step 1. Start by preparing your coconut pieces. If using fresh young coconuts, carefully crack them open and extract the soft, jelly-like meat. Cut into small pieces about 5-8mm in size (roughly matchstick-sized). If using dried organic coconut strips, soak them in warm water for 15 minutes to rehydrate, then drain and cut to size. You want about 200g (1.5 cups) of prepared coconut pieces.
Step 2. In a large mixing bowl or pitcher, combine the 6 liters of organic coconut water with 1.5 liters of filtered water. The dilution ratio replicates the commercial product's consistency. Stir gently to combine.
Step 3. Dissolve the organic coconut sugar by adding it gradually while stirring continuously. Start with 300g and taste-test, adding the remaining 60g as needed to match your preference. The sugar should completely dissolve within 3-4 minutes of stirring. Coconut sugar dissolves more slowly than refined sugar, so patience is key.
Step 4. Add the organic citric acid (start with 1.5g and add more to taste). Stir thoroughly for 2-3 minutes until completely dissolved. The citric acid provides the slight tang present in the original and acts as a natural preservative.
Step 5. Gently fold in the prepared coconut pieces, distributing them evenly throughout the liquid. These will settle over time, which is normal and matches the original product.
Step 6. Transfer to clean glass bottles or containers, leaving about 1 inch of headspace. Refrigerate immediately. Before serving, always shake or stir gently to redistribute the coconut pieces, as they naturally separate.
