Step 1. Measure all ingredients precisely using a kitchen scale for best results. In a large mixing bowl, combine 700g organic coconut sugar, 240g organic cocoa powder, and 4g Redmond Real Salt. Whisk thoroughly for 3-4 minutes to break up any clumps - cocoa powder tends to create pockets if not properly distributed.
Step 2. Add 180g organic whole milk powder and 60g organic coconut milk powder to the chocolate mixture. Whisk again for 2-3 minutes, paying special attention to corners where powder can accumulate. The mixture should be uniform in color with no white or dark streaks.
Step 3. Finally, add 6g organic vanilla powder and whisk for another minute. The vanilla is potent, so ensure even distribution throughout the entire batch. Sift the entire mixture through a fine-mesh strainer if you want ultra-smooth texture, though this is optional.
