Instructions

Step 1. Preheat your oven to 350°F (175°C). Line two large rimmed baking sheets with parchment paper. Spread 450g (about 1 lb) of raw organic peanuts in a single layer on each baking sheet, ensuring peanuts don't overlap — overcrowding leads to uneven roasting and some peanuts burning while others stay raw.
Step 2. Roast for 12-15 minutes, stirring every 4-5 minutes with a wooden spoon to ensure even browning. Watch carefully after the 10-minute mark — peanuts can go from perfectly golden to burnt very quickly. You'll know they're done when they're golden brown and smell nutty and fragrant, not raw or grassy.
Step 3. Test doneness by removing one peanut and letting it cool for 30 seconds, then taste. It should be crunchy throughout with no soft or chewy center, and have a rich, toasted flavor. If still slightly soft, continue roasting in 2-3 minute intervals, stirring between checks.
Step 4. Remove from oven and spread the hot peanuts on clean kitchen towels to cool completely, about 20-30 minutes. They'll continue cooking slightly from residual heat, so don't worry if they seem just barely underdone when you remove them. Toss occasionally while cooling to prevent steam buildup.
