Instructions
Step 1. Sort through 1440g (7.5 cups) of organic wheat berries, removing any stones or damaged grains. Rinse thoroughly in cool water until water runs clear, about 2-3 minutes of gentle rubbing.
Step 2. Place wheat berries in a large pot with 6 cups filtered water. Bring to a boil, then reduce heat to low and simmer covered for 60-90 minutes until berries are tender but still have slight bite. They should be soft enough to shred but not mushy. Test by pressing one between your fingers - it should yield but hold its shape.
Step 3. Drain wheat berries thoroughly in a fine mesh strainer and let cool for 15 minutes. Working in batches, pulse the cooked wheat in a food processor 8-10 times until it forms coarse shreds about 1/4 inch long. Don't over-process into powder - you want distinct wheat shreds.
