Instructions
Step 1. Preheat your oven to 350°F (175°C). Spread the 900g of raw organic sunflower seeds in a single layer on a large rimmed baking sheet. Roast for 8-12 minutes, stirring every 3-4 minutes to ensure even browning. The seeds are done when they're golden brown and smell fragrant - be careful not to over-roast as they can become bitter.
Step 2. Remove from oven and let the roasted seeds cool completely for at least 30 minutes. This is crucial - warm seeds will create a gummy paste instead of smooth butter. While cooling, the natural oils will redistribute evenly throughout the seeds.
Step 3. Transfer the cooled roasted sunflower seeds to a high-powered food processor (at least 11-cup capacity). Process continuously for 2-3 minutes until the seeds break down into coarse meal, then continue processing for another 3-5 minutes. The mixture will go through several stages: coarse meal → fine powder → clumpy paste → smooth, creamy butter.
Step 4. Once the mixture reaches a smooth, flowing consistency (similar to natural peanut butter), add the 6g (1 teaspoon) of sea salt. Pulse 3-4 times to distribute evenly. Taste and adjust salt if needed - some prefer up to 1.5 teaspoons for a more pronounced flavor.
