Instructions

Step 2. Add 90g (4 tablespoons) raw honey to the melted coconut oil and whisk vigorously for 1-2 minutes until completely combined. The mixture should be smooth and golden. Add 5g (1 teaspoon) fine sea salt and 15g (1 tablespoon) coconut sugar, whisking until dissolved.
Step 3. Add all 896g (2 lbs) raw almonds to the honey mixture and stir thoroughly with a large wooden spoon for 2-3 minutes, ensuring every almond is completely coated. The nuts should glisten uniformly — any dry spots will burn during roasting.
Step 4. Spread almonds in a single layer on the prepared baking sheet, making sure they don't overlap. This is crucial for even roasting. Bake for 12-15 minutes, then remove and stir gently with a spatula, redistributing any nuts that are browning faster.
Step 5. Continue baking for another 8-12 minutes, checking every 4 minutes and stirring as needed. Almonds are done when they're deep golden brown and the coating looks set and slightly crystallized. Total roasting time is typically 20-27 minutes depending on your oven.
Step 6. Remove from oven and immediately transfer almonds to a clean parchment-lined surface, spreading them out to cool. Do not leave on the hot baking sheet or they'll continue cooking. Let cool completely for 15-20 minutes — the coating will become crisp as it cools. Store in airtight containers for up to 3 weeks.

Storage
