Ingredients

Organic medium-dark roast coffee beans

Instructions

Step 1. Grind 340g organic coffee beans to a coarse consistency (like coarse sea salt). Use a burr grinder if possible for even extraction. Measure exactly - too fine and you'll over-extract bitter compounds, too coarse and you'll under-extract flavor.
Step 2. Combine ground coffee with 1.5 liters filtered water in a large glass jar or French press. Stir thoroughly to ensure all grounds are saturated - dry pockets will create weak spots in your final concentrate. Cover and steep at room temperature for 18-24 hours. Longer steeping extracts more caffeine and body.
Step 3. Strain the cold brew through a fine-mesh strainer lined with cheesecloth or coffee filter. Press gently to extract liquid without forcing bitter sediment through. You should have approximately 1.2 liters of smooth, concentrated cold brew.
Step 4. Pour the strained cold brew into a heavy-bottomed saucepan and gently simmer over low heat (never boiling - this destroys delicate flavor compounds). Reduce slowly until you have approximately 200ml (about 3/4 cup) of thick, syrup-like concentrate. This takes 45-60 minutes. The concentrate should coat a spoon but still pour easily.
Step 5. For syrup form: Let cool completely and store in glass jar. For powder form: While concentrate is still warm (not hot), slowly whisk in 60g tapioca maltodextrin until smooth. Spread thin on parchment-lined baking sheet and dehydrate in oven at lowest setting (150-170°F) with door cracked for 4-6 hours until completely dry and powdery.
Step 6. To use: Mix 1 teaspoon concentrate (syrup or powder) with 6-8 oz hot water. Adjust strength to taste - start with less and add more rather than over-concentrating. Store syrup concentrate refrigerated for up to 3 months, powder form in airtight container at room temperature for up to 6 months.

Syrup form: refrigerate in glass jar for up to 3 months. Powder form: store in airtight container away from light and moisture for up to 6 months. Both forms maintain potency longer than commercial instant coffee due to absence of anti-caking agents.
