Instructions
Step 1. In a high-speed blender, combine 240ml (1 cup) organic heavy cream with 180ml (3/4 cup) filtered water. The cream-to-water ratio is crucial here - too much cream makes it too thick for coffee, too little makes it watery. Blend on low speed for 30 seconds to combine.
Step 2. Add 45g (3 tablespoons) monk fruit sweetener and 2g (1/2 teaspoon) sunflower lecithin powder to the cream mixture. The lecithin is essential for preventing separation - without it, the oils will separate from the cream base within hours. Blend on medium speed for 60 seconds until completely dissolved. You should see no granules of sweetener or lecithin powder remaining.
Step 3. With blender running on low speed, slowly drizzle in 30ml (2 tablespoons) MCT oil over 30 seconds. This slow incorporation prevents the oil from forming large droplets that won't emulsify properly. The mixture should look completely smooth and homogeneous - no oil slicks visible.
Step 4. Add 10ml (2 teaspoons) organic vanilla extract and 1g (pinch) sea salt. Blend on high speed for 90 seconds until the mixture is completely smooth and slightly frothy. The salt enhances the vanilla flavor significantly - don't skip it. Taste and adjust sweetness if needed, remembering that flavors will mellow slightly when chilled.
Step 5. Pour the creamer through a fine-mesh strainer into a clean glass jar or bottle to remove any undissolved particles. This step ensures silky smooth texture in your coffee. Store in refrigerator immediately - this version requires cold storage unlike commercial shelf-stable versions.
Step 6. To use: Shake well before each use as natural separation may occur (this is normal). Add 1-2 tablespoons (15-30ml) per cup of coffee. The creamer will blend smoothly into hot coffee without curdling if used within 7-10 days. For best results, let it come to room temperature for 5 minutes before adding to very hot coffee to prevent temperature shock.
