Instructions
Step 1. If using fresh organic limes: Roll 6-8 organic limes firmly on the counter while pressing down to break internal membranes (this releases more juice). Cut in half and juice using a citrus reamer or fork, straining out pulp and seeds. You need 120ml (0.5 cup) total fresh juice. Fresh juice provides brighter flavor than bottled but requires more prep time.
Step 2. Prepare your carbonated water using a SodaStream or similar device. Fill the 1-liter bottle to the fill line with filtered water (avoid distilled water as minerals help CO2 dissolve better). Carbonate to your preferred level - use 3-4 pumps for light fizz, 5-6 pumps for medium (Spindrift-level), or 7-8 pumps for extra fizz. The CO2 dissolves better in cold water, so chill the water first for maximum carbonation.
Step 3. In each 355ml serving glass or bottle, measure exactly 4ml (about 3/4 teaspoon) of fresh lime juice. This ratio replicates Spindrift's subtle lime flavor - more would overpower the water, less would taste flat. Use a small measuring spoon or syringe for consistency across batches.
Step 4. Add 351ml of freshly carbonated water to each serving, leaving about 4ml headspace. Pour slowly down the side of the glass to preserve carbonation. Stir gently once with a spoon - vigorous stirring releases CO2 and reduces fizz. The lime juice will naturally distribute without much mixing.
Step 5. Serve immediately over ice if desired, or store in airtight bottles in the refrigerator. For batch prep: combine all lime juice in a 120ml bottle and add 4ml to each serving as needed. Carbonated water stays fizzy for 2-3 days when properly sealed. Shake gently before drinking as natural lime oils may separate slightly.

Fresh lime juice keeps 3-4 days refrigerated. Carbonated water maintains fizz for 2-3 days in sealed bottles. For best quality, carbonate water fresh and mix individual servings as needed rather than batch mixing.
