Instructions

Remove from heat and whisk in the organic pectin powder gradually to prevent clumping - add about 1/4 teaspoon at a time while whisking vigorously for 30 seconds between additions.
Step 2. Add the organic citric acid and ascorbic acid to the hot water mixture, whisking until completely dissolved (about 1 minute). These acids will lower the pH and create the characteristic tart flavor profile. The mixture should be clear with no visible particles.
Step 3. Stir in the organic cranberry juice concentrate while the mixture is still warm. This helps integrate the concentrate evenly. The liquid should turn a deep red color naturally from the cranberries - no artificial coloring needed.
Step 4. In a small bowl, mix the stevia extract powder with 2 tablespoons of the warm cranberry mixture to create a slurry. This prevents the stevia from clumping when added to the full batch. Whisk this slurry back into the main mixture until completely incorporated.

Step 6. Transfer to clean glass jars or BPA-free containers. Refrigerate for at least 2 hours before serving to allow flavors to meld. Shake or stir before each use as natural separation may occur.
