Natural coating that provides the characteristic shine and prevents sticking
Instructions
Step 1. Prepare 5 separate mixing bowls for each color. In each bowl, combine 80g (about 6.5 tablespoons) organic cane sugar with 1.6g (about 1/3 teaspoon) malic acid and 0.8g (about 1/6 teaspoon) gum acacia. This ensures even distribution of tart flavor and binding agent throughout each color batch.
Step 2. Create color and flavor combinations: Red bowl gets 1/4 teaspoon beetroot powder + 3 drops strawberry extract, Yellow gets pinch turmeric + 3 drops lemon oil, Green gets pinch spinach powder + 3 drops lime oil, Blue gets pinch spirulina + 3 drops blue raspberry, Orange gets mix of turmeric and beetroot + 3 drops orange oil. Mix each thoroughly - powders must be completely incorporated or you'll get color streaks.

Step 4. Using your fingers, press and form each mixture into irregular small pieces about 2-4mm in size (roughly the size of original Nerds). Work on parchment paper and try to make them uneven and chunky - perfection isn't the goal here. The slight moisture will help them hold together temporarily.
Step 5. Spread all pieces on parchment-lined baking sheets, keeping colors separate if desired for visual appeal. Let air dry at room temperature for 4-6 hours until completely hard and crystalline. They should sound crispy when tapped together. If your kitchen is humid, place in oven at lowest setting (170°F) with door cracked for 1-2 hours instead.
Step 6. For the carnauba wax coating: Melt 2g carnauba wax in double boiler until liquid. Working in small batches, quickly toss dried candy pieces in melted wax using a fork, then immediately transfer back to parchment to cool. This creates the signature shine and prevents pieces from sticking together during storage. Work fast - wax hardens quickly.
Step 7. Store in airtight container at room temperature for up to 3 months. Serve 15g portions (about 2-3 tablespoons) to match original Nerds serving size. If pieces stick together during storage, gently break apart - this is normal and doesn't affect quality or taste.
