Instructions

Step 1. Measure 600g (5 cups) of organic white rice flour into a large mixing bowl. Use a kitchen scale for accuracy as volume measurements can vary significantly with rice flour. Sift the flour through a fine-mesh strainer to remove any lumps and ensure uniform texture.
Step 2. Add 6g (2 teaspoons) of organic sunflower lecithin powder to the rice flour. This replaces the soy lecithin in the commercial version and helps with mixing when prepared with liquid. Whisk thoroughly for 2-3 minutes to distribute evenly — lecithin can clump if not properly incorporated.
Step 3. Measure 12g (4 teaspoons) of nutritional yeast and add to the mixture. This provides natural B vitamins that would otherwise require synthetic fortification. Nutritional yeast has a mild, slightly cheesy flavor that babies typically enjoy.
Step 4. Add 18g (1 tablespoon) of finely ground organic coconut sugar and 2g (1/2 teaspoon) of finely ground Redmond Real Salt. Mix everything together with a large whisk for 3-4 minutes, ensuring complete distribution. The mixture should be uniform in color with no visible streaks or clumps.
Step 5. Transfer the finished cereal to an airtight glass container or food-grade storage container. Label with the date and contents. Store in a cool, dry place away from direct sunlight.
Step 6. To prepare for feeding: Mix 15g (2 tablespoons) of the cereal powder with 60-90ml (4-6 tablespoons) of warm breast milk, formula, or filtered water. Start with less liquid and add more to achieve desired consistency. Let sit for 2-3 minutes to allow the rice flour to absorb the liquid fully. Stir again before serving. Always test temperature before feeding to baby.

Storage
