Instructions
Step 1. Preheat your oven to 350°F (175°C). Spread the 680g of raw organic peanuts in a single layer on a large rimmed baking sheet. Roast for 8-12 minutes, stirring every 3-4 minutes to ensure even browning. The peanuts are done when they smell fragrant and have turned a light golden brown - avoid over-roasting as this creates bitter flavors and can damage the oils.
Step 2. Remove peanuts from oven and let them cool completely for 15-20 minutes. This cooling step is critical because hot peanuts will create a gummy paste instead of smooth butter. While cooling, the natural oils will redistribute evenly throughout each peanut.
