Instructions
Step 1. Prepare your workspace by lining a small 8x8 pan with parchment paper and lightly dusting with tapioca starch. Measure out all ingredients precisely using a kitchen scale - accuracy matters for proper texture. Have small candy molds ready if you prefer individual pieces (silicone ice cube trays work well).
Step 2. In a small saucepan over low heat, gently warm the coconut oil (45g) until just melted, about 2-3 minutes. Remove from heat immediately - overheating will affect texture. Add the beeswax pellets (15g) and stir continuously for 3-4 minutes until completely dissolved. The mixture should be smooth and golden.
Step 3. In a separate bowl, whisk together the erythritol (120g), tapioca starch (30g), citric acid (2g), and turmeric (1/8 teaspoon) until no clumps remain. This dry mixing prevents lumps in the final product. Add the stevia extract (1/4 teaspoon) and fruit extracts (2 tsp pineapple + 1 tsp orange) to the dry mixture and whisk thoroughly.
Step 4. Slowly pour the warm coconut oil-beeswax mixture into the dry ingredients while whisking continuously. The mixture will thicken quickly - work fast but thoroughly. Whisk for 2-3 minutes until completely smooth and no streaks remain. The consistency should be like thick cake batter.
Step 5. Pour the mixture into your prepared pan or molds immediately while still warm and workable. Use a spatula to spread evenly and tap the pan gently to release air bubbles. If using molds, fill each cavity about 3/4 full. The mixture sets quickly as it cools.
Step 6. Allow to cool at room temperature for 30 minutes, then refrigerate for 2 hours until completely firm. Once set, cut into 60 small squares (about 1/2 inch each) or remove from molds. Dust lightly with additional tapioca starch to prevent sticking.
Step 7. Store in an airtight container in the refrigerator for up to 3 weeks or at room temperature for 1 week. Use 1 candy as needed for fresh breath or tropical flavor satisfaction. These provide about 2-3 minutes of chewing before dissolving, similar to sugar-free gum.
