Instructions
Step 1. Preheat your oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper. Lower temperature is crucial — high heat will burn the avocado oil and create bitter compounds that seed oils mask in commercial versions.
Step 2. In a large mixing bowl, toss the 907g raw almonds with 45ml avocado oil using your hands or a wooden spoon. Mix for 2-3 minutes until every almond glistens evenly. The oil coating should be just enough to make seasonings stick without pooling.
Step 3. In a separate small bowl, whisk together all dry ingredients: 30g coconut sugar, 8g wasabi powder, 15g tamari powder, 8g tapioca starch, 4g garlic powder, 3g onion powder, 6g sea salt, and 8g nutritional yeast. Whisk vigorously for 1-2 minutes to break up any clumps — tapioca starch and nutritional yeast tend to stick together.
Step 4. Sprinkle the seasoning mixture over the oiled almonds in 3-4 additions, tossing thoroughly between each addition. Use your hands to rub the seasonings into every crevice. The tapioca starch will help create an even coating that won't fall off during storage.
Step 5. Spread almonds in a single layer on the prepared baking sheet — don't overcrowd or they'll steam instead of roast. Bake for 15 minutes, then stir gently and rotate the pan.
