Fresh organic coconut water
3.6L (about 15 cups) · Fresh organic young Thai coconuts or Harmless Harvest Organic Coconut Water

Instructions
Step 1. If using fresh coconuts: Select 15 young Thai coconuts (green, heavy, with sloshing sound when shaken). Chill coconuts in refrigerator for 2 hours before opening. Use a clean coconut opener or large knife to create a triangular opening at the top. Pour coconut water through fine mesh strainer into large glass pitcher to remove any shell fragments. Measure exactly 3.6L of coconut water.
Step 2. If using bottled organic coconut water: Purchase 3.6L of Harmless Harvest Organic Coconut Water (avoid brands with added flavors or gums). Pour into large glass pitcher and bring to room temperature if refrigerated.
Step 3. Add coconut nectar: Measure 15g (1 tablespoon) of Coconut Secret Organic Coconut Nectar. Warm 240ml of the coconut water to room temperature in a small saucepan (do not heat above 100°F to preserve enzymes). Dissolve coconut nectar completely into the warm coconut water, stirring for 1-2 minutes until no residue remains.
Step 4. Add vitamin C: If using fresh lime juice, roll 2-3 organic limes to soften, cut and juice to obtain 15ml (1 tablespoon) fresh juice. Strain to remove pulp. If using ascorbic acid powder, measure 450mg (about 1/8 teaspoon) and dissolve in 60ml room temperature coconut water first.
Step 5. Combine all ingredients: Pour the sweetened coconut water mixture and vitamin C solution back into the main pitcher with remaining coconut water. Stir gently for 30 seconds to ensure even distribution. Taste and adjust sweetness if needed - the flavor should be subtly sweet, not sugary.
Step 6. Final processing: Using a fine mesh strainer lined with cheesecloth, strain the entire mixture to remove any remaining particles. This ensures smooth consistency matching commercial product. Pour into glass bottles or BPA-free containers, leaving 1-inch headspace.
Step 7. Storage and serving: Refrigerate immediately and consume within 3-5 days for optimal freshness. Shake gently before each serving as natural separation may occur. Serve chilled at 38-42°F.
