Why This Recipe is Seed Oil Free
Commercial Campbell's Condensed Tomato Soup from Campbell's often contains inflammatory seed oils like canola, soybean, or sunflower oil. This homemade version replaces them with healthier fats like butter, ghee, coconut oil, or avocado oil — giving you the same great taste without the processed oils.
Ingredients
Organic Tomato Paste
340g (about 12 oz or 2 cans) · Muir Glen Organic Tomato Paste
Primary tomato base providing concentrated flavor and lycopene
Natural preservative and tartness enhancer replacing synthetic citric acid
Filtered Water
3000ml (about 12.5 cups) · Home filtered water
Creates proper consistency and dissolves all ingredients evenly
Instructions
Step 1. In a large, heavy-bottomed pot, whisk together 90g (3/4 cup) organic flour with 500ml (2 cups) of the filtered water until completely smooth - whisk vigorously for 2-3 minutes to eliminate any lumps. This slurry prevents clumping when heated and ensures smooth final texture.
Step 2. Add 340g (12 oz) organic tomato paste to the flour slurry and whisk until fully incorporated, about 2-3 minutes. The mixture will be thick and concentrated at this stage. Add 240g (1 cup) coconut sugar and whisk continuously for another 2 minutes until sugar begins dissolving.
Step 3. Gradually add remaining 2500ml (10.5 cups) filtered water while whisking constantly. Bring to a gentle boil over medium-high heat, then reduce to low heat and simmer for 25-30 minutes, stirring every 5 minutes. The soup should thicken slightly and develop deep tomato flavor - taste after 20 minutes to monitor sweetness and consistency.
Step 4. Add 11g (2 teaspoons) Redmond Real Salt and 2g (1/2 teaspoon) organic citric acid. Stir thoroughly and simmer for 5 more minutes. Taste and adjust seasoning - the soup should have balanced sweet-tart flavor with 480mg sodium equivalent per 125g serving. The consistency should coat a spoon but still pour easily.
Step 5. Remove from heat and allow to cool for 10 minutes before transferring to storage containers. For immediate use, dilute 125g (1/2 cup) condensed soup with 125ml (1/2 cup) water or milk and heat through. Store concentrate in refrigerator up to 5 days or freeze in 125g portions for up to 3 months.
Storage
Store concentrate in glass jars or BPA-free containers in refrigerator for up to 5 days. Can be frozen in ice cube trays or small containers for up to 3 months. Thaw overnight in refrigerator before use.
