Instructions

Spread them separately on the prepared baking sheets, keeping different items separated. Roast for 12-15 minutes, stirring halfway through, until the pepitas are golden and puffed and the almonds are lightly toasted with a nutty aroma. Remove and let cool completely — this step adds crucial flavor depth that matches the original product's roasted components.
Step 2. While nuts are cooling, prepare your dried fruit mixture. In a large mixing bowl, combine 210g (1.5 cups) unsweetened dried cranberries and 60g (0.5 cup) black raisins. Gently warm 15g (1 tablespoon) refined coconut oil in a small saucepan over low heat just until melted — don't overheat as this will make it greasy. Drizzle the melted coconut oil over the dried fruits and toss thoroughly with clean hands or a spoon until every piece is lightly coated. This replaces the problematic sunflower oil coating and prevents clumping.
Step 3. In your largest mixing bowl, combine all the cooled roasted items (pepitas and almonds) with the remaining raw nuts and seeds: 60g (0.5 cup) raw almonds, 105g (1 cup) walnut halves, 85g (0.75 cup) pecan halves, and 70g (0.5 cup) raw sunflower seeds. Add the coconut oil-coated dried fruits and 2g (0.5 teaspoon) Himalayan pink salt. Using clean hands or two large spoons, toss everything together for 2-3 minutes until evenly distributed — the slight tackiness from the coconut oil will help everything stick together naturally.
Step 4. Spread the completed mix on a parchment-lined baking sheet in a single layer. Let it rest at room temperature for 15-20 minutes to allow the coconut oil to firm up slightly, which prevents the mix from becoming greasy and helps maintain the individual textures of each component. Taste and adjust salt if needed — you want just enough to enhance the natural flavors without being noticeably salty.
Step 5. Transfer to airtight glass jars or BPA-free containers, filling them only 3/4 full to allow for gentle shaking to redistribute ingredients before serving. Store in a cool, dry pantry away from direct sunlight. Shake or stir gently before each use as heavier nuts tend to settle.
