Commercial Italian Sparkling Mineral Water from Kirkland Signature often contains inflammatory seed oils like canola, soybean, or sunflower oil. This homemade version replaces them with healthier fats like butter, ghee, coconut oil, or avocado oil — giving you the same great taste without the processed oils.

Ingredients

High-quality mineral water
12 liters (about 3.17 gallons) · Gerolsteiner Natural Mineral Water or San Pellegrino

1 CO2 cylinder (60L capacity) · SodaStream CO2 cylinders or bulk food-grade CO2

Instructions

Step 1. Ensure your mineral water is chilled to 38-42°F (3-6°C) before carbonation. Cold water holds CO2 much more effectively than warm water. If using room temperature water, refrigerate for at least 2 hours before carbonating.
Step 2. If using a SodaStream or similar home carbonation system: Fill the carbonation bottle to the fill line with chilled mineral water (typically 1 liter/33.8oz). Attach securely to the machine.
Step 3. Carbonate according to your preference: For light carbonation (similar to commercial sparkling water), press the carbonation button 2-3 times with 2-second intervals between presses. For medium carbonation, use 4-5 presses. For high carbonation, use 6-8 presses. Listen for the 'buzz' sound that indicates CO2 saturation.
Step 4. Remove the bottle carefully by tilting it slightly to release pressure gradually. The water should have a pH around 5.5-6.5 and contain approximately 6-8 volumes of CO2 (similar to commercial sparkling water).
Step 5. Transfer immediately to glass bottles for storage, leaving about 1 inch of headspace. Seal tightly with caps designed for carbonated beverages. Glass retains carbonation better than plastic.
Step 6. For bulk preparation: Carbonate in 1-liter batches and combine in a large glass container with tight-fitting lid. Alternatively, invest in a larger carbonation setup with 5-10 lb CO2 tank for more efficient bulk production.
Step 7. Serve immediately or store refrigerated. Optimal serving temperature is 38-45°F. Each 500g serving provides approximately 10mg sodium naturally occurring in the mineral water, matching the commercial product's mineral profile.

Storage

Store in refrigerator at 38-42°F in sealed glass bottles. Maintains optimal carbonation for 3-5 days. Avoid temperature fluctuations which cause CO2 loss.
