Ingredients

Organic fresh pineapple

Instructions

Step 1. Wash and prepare the pineapples: Remove the crown and bottom, then use a sharp knife to cut away the skin in strips from top to bottom. Remove any remaining eyes with a paring knife. Core the pineapple and cut into 1/4 inch thick rings or strips - consistency in thickness is crucial for even dehydration.
Step 2. Pre-treat if desired: While optional, you can dip pineapple pieces in fresh lemon juice (2 tablespoons per cup of pineapple) for 30 seconds to help preserve color and add slight tartness. Pat dry with paper towels afterward.
Step 3. Arrange on dehydrator trays: Place pineapple pieces on dehydrator trays with at least 1/4 inch space between pieces. Do not overlap. If using an oven, line baking sheets with parchment paper and arrange similarly.
Step 4. Dehydrate at proper temperature: Set dehydrator to 135°F (57°C) and dry for 12-18 hours, checking every 4 hours. Pieces should be leathery and pliable when done, not crispy. For oven method: set to lowest temperature (170°F max) with door slightly ajar, checking every 2-3 hours.
Step 5. Test for doneness: Properly dehydrated pineapple should bend without breaking and have no visible moisture when squeezed. It should feel like leather and not sticky. Under-dried fruit will spoil quickly, over-dried will be too tough.
Step 6. Cool and store: Let cool completely before storing. Package in airtight containers or vacuum-sealed bags. Store in a cool, dry place. Properly dried fruit jerky will keep 6-12 months when stored correctly.
