Organic Chocolate Peanut Butter Chunk Protein Bars
This commercial protein bar contains sunflower lecithin (a seed oil derivative) and synthetic corn fiber. Our clean version eliminates the lecithin entirely and uses organic psyllium husk for fiber, while boosting nutrition with grass-fed whey protein and organic nut ingredients for superior bioavailability and no inflammatory compounds.

Why This Recipe is Seed Oil Free
Commercial Chocolate Peanut Butter Chunk Protein Bar from ProteinBar often contains inflammatory seed oils like canola, soybean, or sunflower oil. This homemade version replaces them with healthier fats like butter, ghee, coconut oil, or avocado oil — giving you the same great taste without the processed oils.
The original Chocolate Peanut Butter Chunk Protein Bar may also contain artificial dyes. Check it on DyeFreeCheck to find out.

Instructions
Step 1. Melt the organic cocoa butter (60g) using a double boiler or microwave in 30-second intervals until completely liquid. Set aside to cool slightly. This gentle melting preserves the cocoa butter's beneficial properties and prevents scorching.
Step 2. In a large mixing bowl, combine the dry ingredients: organic whey protein isolate (400g), organic peanut flour (80g), organic cocoa powder (40g), organic psyllium husk powder (25g), organic erythritol (120g), and sea salt (6g). Whisk thoroughly for 3-4 minutes to eliminate any clumps—protein powders and psyllium can create pockets if not properly distributed.
Step 3. In a separate bowl, mix the wet ingredients: organic peanut butter (180g), melted cocoa butter, vanilla extract (10ml), and stevia extract (2g). Stir vigorously until completely smooth and uniform. The mixture should be spreadable but not runny—if too thick, warm slightly.
Step 4. Gradually add the wet mixture to the dry ingredients, stirring constantly with a wooden spoon or sturdy spatula. The mixture will be very thick and may seem dry at first—this is normal. Continue mixing for 5-6 minutes until a cohesive, moldable dough forms. If too dry, add water 1 tablespoon at a time.
Step 5. Chop the organic unsweetened chocolate (40g) into small chunks (about pea-sized). Fold these chunks evenly throughout the mixture, ensuring even distribution. The chunks provide texture contrast and bursts of intense chocolate flavor.
Step 6. Line an 8×8 inch pan with parchment paper, leaving overhang for easy removal. Press the mixture firmly and evenly into the pan using a flat-bottomed measuring cup or your hands. Apply significant pressure to eliminate air pockets—this ensures bars hold together when cut.
Step 7. Refrigerate for at least 4 hours or overnight until completely firm. The psyllium husk needs time to fully hydrate and create the proper binding texture. For firmer bars, freeze for 2 hours instead.
Step 8. Remove from pan using parchment overhang and cut into 20 equal bars using a sharp knife. Clean the knife between cuts for cleanest edges. Each bar should weigh approximately 60g. Store in airtight container in refrigerator for up to 10 days, or freeze for up to 3 months. Bars can be eaten straight from refrigerator or allowed to come to room temperature for softer texture.
