Instructions
Step 1. Sort through the raw organic peanuts (1000g) and remove any damaged or discolored nuts. This ensures the cleanest flavor and removes any potentially rancid peanuts that could affect the entire batch.
Step 2. Place the sorted peanuts in a large food processor (at least 10-cup capacity). Process on high speed for 1-2 minutes until the peanuts are chopped into small pieces resembling coarse meal. Scrape down the sides of the bowl with a rubber spatula.
Step 3. Continue processing for 2-3 more minutes until the mixture starts to clump and form a paste. The natural oils in the peanuts will begin to release. Scrape down sides again and process for another 2-3 minutes until it becomes creamy.
Step 4. For chunky texture, reserve about 100g (1/2 cup) of the roughly chopped peanuts from step 2 and set aside. Add these back in during the final minute of processing, pulsing just to incorporate - this creates the signature chunks without over-processing them.
Step 5. Add 3g (1/2 teaspoon) of fine sea salt and pulse 3-4 times to distribute evenly. Taste and add up to 1g more salt if desired - the amount should match your preference compared to store-bought versions.
Step 6. Process for a final 30-60 seconds until the consistency reaches your desired smoothness. The mixture should hold together but still have visible chunks. If it seems too thick, the peanut oils will continue to integrate over the next 24 hours.
Step 7. Transfer to clean glass jars immediately. Press down gently to eliminate air pockets and leave 1/4 inch headspace. Wipe jar rims clean before sealing. The peanut butter will be ready to use immediately but flavor develops over 24 hours.
Step 8. Store covered in the refrigerator for up to 3 months or at room temperature for up to 1 month. Natural separation is normal - simply stir before use. No stabilizers means healthier ingredients but requires occasional stirring.
