Instructions

Heat over medium-low heat for 3-4 minutes, stirring constantly until the molasses is completely dissolved and the mixture is smooth. The gentle heat helps dissolve the citric acid crystals and creates a uniform base - avoid boiling as it can concentrate the mixture too much.
Step 2. Remove from heat and let cool to room temperature (about 15 minutes). Add 3 tablespoons (45ml) organic vanilla extract, 4 tablespoons (60ml) cherry juice concentrate, 1 teaspoon (2g) cinnamon powder, and 1/4 teaspoon (0.5g) nutmeg powder. Whisk vigorously for 2-3 minutes to ensure the spices are completely incorporated without clumps. The cooled mixture prevents the alcohol in vanilla extract from evaporating.
Step 3. Add 2 teaspoons (8ml) liquid stevia extract drop by drop while stirring constantly. Taste after each addition - stevia is extremely concentrated and easy to overdo. The mixture should taste quite sweet at this stage since it will be diluted 16:1 with sparkling water. If using powder stevia, dissolve it in 2 tablespoons warm water first.
Step 4. Carefully measure 1/8 teaspoon (0.6g) caffeine powder and dissolve it in 2 tablespoons of the syrup mixture in a separate small bowl. Stir until completely dissolved (caffeine can be gritty), then add back to the main mixture. This provides approximately 41mg caffeine per serving, matching Diet Dr Pepper. Use a digital scale for accuracy - too much caffeine can be dangerous.
