Instructions

Step 1. Rinse 1000g (5 cups) dried organic lentils in cold water using a fine mesh strainer until water runs clear - this removes dust and any debris. Place rinsed lentils in a large heavy-bottomed pot with 2.5 liters (10 cups) filtered water. The 2.5:1 water-to-lentil ratio ensures proper hydration without mushiness.
Step 2. Add 12g (2 teaspoons) Redmond Real Salt, 6 whole organic bay leaves, 2 teaspoons organic dried thyme, 1 teaspoon whole black peppercorns, 8 whole cloves, and 1 teaspoon organic garlic powder to the pot. Stir gently to distribute spices evenly - whole spices will infuse better than ground versions and can be removed later.
Step 3. Bring to a rolling boil over high heat, then immediately reduce to low heat and cover with a tight-fitting lid. Simmer for 25-30 minutes, stirring gently every 10 minutes to prevent sticking. Lentils are done when they hold their shape but are tender when pressed with a fork - avoid overcooking which creates mushy texture.
Step 4. Remove from heat and let stand covered for 10 minutes to allow residual steam to complete cooking. Remove and discard bay leaves, cloves, and peppercorns using a slotted spoon - they've done their job of infusing flavor. Taste and adjust salt if needed, though the sodium content should match the commercial version at about 230mg per 100g serving.
Step 5. Drain any excess liquid (save it - it makes excellent vegetable broth!) and portion into 100g (1/2 cup) servings. Store in refrigerator in airtight glass containers for up to 7 days, or freeze in portion-sized containers for up to 6 months. To reheat, steam gently for 2-3 minutes or microwave for 30-45 seconds until warmed through.
