Instructions

Step 2. In a large mixing bowl, combine 450g (5 cups) organic rolled oats, 75g (1 cup) coconut flakes, 60g (1/2 cup) pumpkin seeds, 45g (1/3 cup) sunflower seeds, and 30g (3 tablespoons) sesame seeds. Whisk together to distribute seeds evenly throughout the oat mixture - this ensures every bite has balanced nutrition and flavor.
Step 3. In a separate smaller bowl, whisk together 90g (1/4 cup) maple syrup, 60g (4 tablespoons) melted coconut oil, 30g (2.5 tablespoons) coconut sugar, 5g (1 teaspoon) vanilla extract, and 2g (1/2 teaspoon) fine sea salt. Whisk vigorously for 30-45 seconds until the coconut sugar begins to dissolve and the mixture is well emulsified. The mixture should be smooth and pourable.
Step 4. Pour the wet mixture over the dry ingredients and use a large wooden spoon or spatula to toss thoroughly for 2-3 minutes. Every oat and seed should be lightly coated with the maple mixture - this ensures even browning and prevents dry spots. The mixture will seem slightly wet but not soggy.
Step 5. Spread the granola mixture evenly on the prepared baking sheet in a single layer, using the back of a spatula to gently press it down. Don't pack it too tightly - you want air circulation for even baking. Bake for 15 minutes, then remove and stir gently with a spatula, breaking up any large clumps while keeping some clusters intact.
Step 6. Continue baking for another 10-15 minutes, stirring every 5 minutes, until the granola is golden brown and feels dry to the touch. Total baking time is usually 25-30 minutes. The granola will continue to crisp as it cools, so don't over-bake. Remove when it's light golden - it will darken slightly as it cools.
Step 7. Allow granola to cool completely on the baking sheet for at least 30 minutes before transferring to storage containers. As it cools, it will become crispy and form natural clusters. Break apart any overly large clumps by hand. Store in airtight glass jars or containers at room temperature for up to 3 weeks, or freeze portions for up to 3 months for longer storage.
