Why This Recipe is Seed Oil Free

Commercial Pistachios from Wonderful often contains inflammatory seed oils like canola, soybean, or sunflower oil. This homemade version replaces them with healthier fats like butter, ghee, coconut oil, or avocado oil — giving you the same great taste without the processed oils.

Instructions

Step 1. Preheat oven to 350°F (175°C). Line a large rimmed baking sheet with parchment paper. This temperature ensures even roasting without burning the delicate pistachio oils.
Step 2. Measure 896g (2 lbs) of raw organic pistachios into a large mixing bowl. Check for any broken shells or debris and remove them. Raw pistachios may vary in moisture content, so roasting time will depend on their initial dryness.
Step 3. Lightly mist the pistachios with filtered water using a spray bottle - about 1-2 tablespoons total. This helps the salt adhere evenly. Toss with your hands to distribute moisture.
Step 4. Sprinkle 12g (2 tablespoons) of Redmond Real Salt over the damp pistachios. Toss thoroughly for 2-3 minutes until salt is evenly distributed. The fine salt crystals should coat most surfaces.
Step 5. Spread pistachios in a single layer on the prepared baking sheet. Avoid overcrowding - use two sheets if necessary. Roast for 12-15 minutes, stirring once halfway through, until pistachios are fragrant and lightly golden.
Step 6. Remove from oven and let cool completely on the baking sheet, about 20 minutes. Pistachios will continue to crisp as they cool. Taste and adjust salt if needed by tossing with additional salt.
Step 7. Store in airtight glass containers or BPA-free containers. Use within 3-4 weeks for best quality and crunch. For longer storage, refrigerate for up to 3 months.
