Instructions

Step 1. Select 10 ripe but firm organic Hass avocados (they should yield slightly to gentle pressure but not be mushy). Wash the exteriors thoroughly under cold water and pat dry with clean towels.
Step 2. Cut each avocado in half lengthwise around the pit. Remove pits and scoop flesh into a large mixing bowl using a spoon, being careful to get all the flesh close to the skin. You should have approximately 1120g of avocado flesh.
Step 3. Using a fork or potato masher, mash the avocados to your desired consistency. For a chunky spread similar to the commercial version, leave some small pieces intact. For smoother consistency, mash more thoroughly but avoid over-processing which can make it gluey.
Step 4. Add 4 tablespoons (60ml) of organic lemon juice and mix gently but thoroughly. The acid will help prevent browning and preserve the vibrant green color. Taste and adjust lemon juice if needed - you want a subtle citrus note without overpowering the avocado.
Step 5. Sprinkle 1.5 teaspoons (8g) of high-quality sea salt evenly over the mixture. Start with this amount and taste, adding more if needed. The salt should enhance the natural avocado flavor without making it taste salty.
Step 6. Add 1 teaspoon (2g) of freshly ground organic black pepper. Freshly ground pepper provides much better flavor than pre-ground. Mix all ingredients gently with a fork until evenly distributed.
Step 7. Taste and adjust seasonings as needed. The spread should have a rich avocado flavor with bright lemon notes and a subtle pepper finish. Cover tightly with plastic wrap, pressing the wrap directly onto the surface to prevent air exposure.
Step 8. For best quality, use immediately or within 24 hours. Store in refrigerator. The spread can be frozen in ice cube trays for longer storage - thaw individual cubes as needed.
