Step 1. Preheat oven to 325°F (163°C). Spread 150g raw hazelnuts on one baking sheet and 133g raw almonds on another. Toast hazelnuts for 8-10 minutes and almonds for 10-12 minutes, stirring once halfway through. They should smell fragrant and be lightly golden. Cool completely before proceeding - hot nuts will create condensation in your storage container.
Step 2. While nuts cool, prepare dried fruits. Chop 150g pitted dates into small pieces about the size of raisins (roughly 1/4 inch). If dates are very dry, soak in warm water for 5 minutes to soften, then drain and pat dry thoroughly before chopping. Break larger banana chips into bite-sized pieces. Chop any oversized apple pieces to match raisin size for consistent texture.
Step 3. In a very large mixing bowl (at least 6-quart capacity), combine the grain base: 1134g rolled oats, 567g wheat flakes, 200g millet flakes, and 100g wheat germ. Whisk together thoroughly with a large whisk or wooden spoon for 2-3 minutes to ensure even distribution - the wheat germ tends to settle and clump.
Step 4. Add all prepared dried fruits to the grain mixture: chopped dates, apple pieces, banana chip pieces, and 283g oil-free raisins. Mix gently but thoroughly with clean hands or a large spoon, ensuring fruits are evenly distributed throughout and not clumping together. The natural sugars can make pieces stick together if not properly dispersed.
Step 5. Add the cooled toasted nuts (hazelnuts and almonds) to the mixture. Perform a final thorough mixing, again using clean hands works best to break up any remaining clumps and achieve uniform distribution. Taste and adjust if needed - you can add more dried fruit for sweetness or more nuts for richness, but maintain roughly the same proportions.
Step 6. Transfer finished muesli to airtight glass jars or food-grade containers in portions that you'll use within 2 weeks. Fill containers completely to minimize air exposure but leave about 1/2 inch headspace. Label with contents and date. Store in a cool, dry pantry away from direct sunlight.
