Instructions

Step 1. Juice 10-12 large organic lemons using a citrus juicer to extract approximately 480ml (2 cups) of fresh lemon juice. Strain through fine mesh to remove pulp and seeds. Fresh juice is critical - bottled lemon juice lacks the bright flavor compounds needed to replicate the original's taste profile.
Step 2. In a large mixing bowl, combine 480ml fresh lemon juice with 60g citric acid powder. Whisk vigorously for 2-3 minutes until citric acid completely dissolves - undissolved crystals will create an unpleasant gritty texture. The mixture should be very tart and acidic at this point.
Step 3. Add 30g monk fruit sweetener and whisk again for 1-2 minutes until fully incorporated. Taste and adjust sweetness - the concentrate should be intensely flavored since it will be diluted significantly. If including green tea extract, add 3g powder now and whisk until no clumps remain.
Step 4. This creates a lemon concentrate base. Store in glass mason jars in refrigerator for up to 2 weeks without preservatives. The high acidity from citric acid and lemon juice provides natural preservation, though shelf life is shorter than commercial products with artificial preservatives.
Step 5. To serve: Add 2-3 tablespoons (30-45ml) of concentrate to 17 oz (502ml) of cold carbonated water. Stir gently to avoid losing carbonation. Storage
