Instructions
Step 1. Rinse 1500g (6 cups) raw organic pumpkin seeds in a fine mesh strainer under cold water until water runs clear, about 2-3 minutes. This removes any debris and prepares seeds for sprouting. Place seeds in a large glass bowl and cover with filtered water by 2 inches. Cover bowl with cheesecloth and secure with rubber band. Soak at room temperature for 8-12 hours.
Step 2. After soaking, drain seeds thoroughly and rinse again. Place damp seeds back in the bowl, cover with cheesecloth, and keep in a dark, room temperature location (68-72°F). Rinse and drain seeds twice daily for 2-3 days until small white sprout tails appear (1/8 inch long). The sprouting process activates enzymes and makes nutrients more bioavailable.
Step 3. Once sprouted, rinse seeds one final time and drain completely. Pat dry with clean kitchen towels, removing as much moisture as possible. Spread sprouted seeds in a single layer on dehydrator trays, ensuring good air circulation. If using an oven, spread on parchment-lined baking sheets.
Step 4. Dehydrate at 105°F for 12-18 hours in a dehydrator, or at lowest oven setting (170°F) for 4-6 hours with door slightly ajar. Seeds are done when completely crispy and snap when bitten. They should have no remaining moisture - any softness means they need more drying time to prevent spoilage.
Step 5. While seeds are still slightly warm from dehydrating, transfer to a large mixing bowl. Sprinkle 25g (4 teaspoons) fine sea salt evenly over the seeds. Toss thoroughly with clean hands for 2-3 minutes, ensuring every seed is lightly coated. The residual warmth helps the salt adhere properly.
Step 6. Cool completely to room temperature before storing. Test a few seeds to ensure they're completely crispy - they should make an audible crunch. Store in airtight glass jars or vacuum-sealed bags in a cool, dry place. Properly dehydrated sprouted seeds will maintain crispness for 2-3 months.
Storage
Store in airtight containers in a cool, dry place for up to 3 months. Refrigerate for up to 6 months. If seeds lose crispness, re-dehydrate for 1-2 hours at 105°F.
