Instructions

Step 1. Measure 475g (2.25 cups) of organic erythritol into a large mixing bowl. Erythritol crystals should be fine and powdery - if yours are large crystals, pulse them in a food processor for 30-60 seconds first to create a finer texture that blends more easily.
Step 2. Add 25g (3 tablespoons) of organic stevia extract powder to the erythritol. Start with less stevia if you prefer milder sweetness - you can always add more. Pure stevia extract is incredibly potent, so precise measurement is critical for consistent results.
Step 3. Using a fine-mesh whisk, blend the ingredients thoroughly for 3-4 minutes, making sure to break up any clumps. The stevia powder tends to clump with the erythritol, so thorough whisking ensures even distribution throughout the batch. Alternatively, pulse the mixture in a food processor for 15-20 seconds.
Step 4. Pass the mixture through a fine-mesh sieve to remove any remaining lumps. This step is crucial for smooth dissolution in beverages and even distribution in recipes. Any larger particles will create bitter spots of concentrated stevia.
Step 5. Store in an airtight glass container in a cool, dry place. Label with the date and sweetness ratio. Use 1/4 teaspoon (1g) as equivalent to 1 teaspoon of regular sugar in beverages, or adjust to taste. For baking, replace sugar 1:1 by volume but reduce liquid ingredients slightly since erythritol doesn't bind moisture like sugar.

Storage

Store in airtight glass container away from moisture for up to 2 years. Erythritol is very stable but can absorb humidity and clump. If clumping occurs, simply sift through fine mesh before use.
