Instructions

Step 2. Upon bringing milk home, immediately refrigerate at 35-38°F (2-3°C). Do not leave at room temperature for more than 2 hours. Store milk in the main body of the refrigerator, not in the door where temperatures fluctuate.
Step 3. If you have access to raw milk and want to pasteurize at home for safety: Pour 1 liter of raw milk into a heavy-bottomed saucepan. Heat slowly while stirring constantly with a wooden spoon, monitoring temperature with a candy thermometer. Heat to exactly 145°F (63°C) and hold for 30 minutes, or heat to 161°F (72°C) and hold for 15 seconds. This low-temperature, long-time pasteurization preserves more nutrients than commercial high-heat methods.
Step 4. After pasteurization (if applicable), cool rapidly by placing the saucepan in an ice bath, stirring until temperature drops to 40°F (4°C) within 30 minutes. This prevents bacterial growth and maintains milk quality.
