Instructions
Step 1. Measure 300g (2.5 cups) organic cacao powder into a large mixing bowl. Sift through fine mesh strainer to remove any lumps - cacao can clump during storage and lumps will create gritty texture in drinks.
Step 2. Add 15g (1 tablespoon) stevia extract powder to the cacao. Start with this amount as stevia is very potent - you can adjust sweetness in individual servings. Whisk together for 2-3 minutes to ensure even distribution since stevia tends to clump.
Step 3. Measure 30g (3 tablespoons) organic sunflower lecithin and add to mixture. Lecithin helps the powder dissolve smoothly in liquids and prevents separation. Whisk thoroughly - lecithin is sticky and needs good distribution.
Step 4. Add 3g (1/2 teaspoon) fine sea salt and 150g (1.25 cups) coconut milk powder. The salt enhances chocolate flavor while coconut milk powder provides natural creaminess without dairy processing. Mix everything together for 3-4 minutes until completely uniform.
Step 5. Sift the entire mixture through fine mesh strainer twice to ensure no clumps remain. Transfer to airtight glass jar or container with tight-fitting lid. Label with date and contents.
Step 6. To use: Add 1 tablespoon (11g) to 8-12 oz hot or cold liquid (water, milk, or plant milk). For hot drinks, add powder to small amount of hot liquid first and whisk into paste, then add remaining liquid to prevent clumping. For cold drinks, blend or shake vigorously in closed container.
Step 7. Taste and adjust: If too bitter, add tiny pinch more stevia or a small amount of raw honey to individual servings. If too sweet, dilute with more liquid or reduce powder amount to 2 teaspoons per serving.
Storage
Store in airtight container in cool, dry place for up to 12 months. Coconut milk powder and cacao are shelf-stable but moisture will cause clumping. Use desiccant packet if storing in humid climate.
