Step 3. Begin adding the olive oil in a very slow, steady stream while whisking constantly. Start with just drops for the first 2-3 tablespoons, then increase to a thin stream. This gradual incorporation prevents the emulsion from breaking. The mixture should thicken and become creamy after about half the oil is added. If it seems too thick, alternate adding oil and a teaspoon of water.
Step 4. Once all oil is incorporated, sprinkle the xanthan gum evenly over the surface and whisk vigorously for 2-3 minutes until no lumps remain. The dressing should be smooth and slightly thicker than store-bought versions. If you prefer a thinner consistency, whisk in water 1 teaspoon at a time.
