Instructions

Step 1. Measure 85g (⅓ cup) organic sesame seeds into a clean, dry skillet. Toast over medium heat for 3-4 minutes, stirring constantly with a wooden spoon. Seeds should become golden brown and fragrant—you'll smell a rich, nutty aroma when ready. Don't let them burn or they'll become bitter. Remove from heat immediately when toasted.
Step 2. Pour 473ml (16 fl oz) organic avocado oil into a heavy-bottomed saucepan. Add the toasted sesame seeds and heat over medium-low heat (around 200-250°F) for 15-20 minutes. The oil should barely simmer—large bubbles indicate too much heat. Stir occasionally. The seeds will continue darkening and the oil will become fragrant with sesame aroma.
Step 3. Remove from heat and let cool completely to room temperature, about 45 minutes. The longer steeping time develops deeper flavor. Taste-test by dipping a clean spoon—the oil should have rich sesame flavor without being overpowering.
Step 4. Strain the cooled oil through a fine-mesh strainer lined with cheesecloth or coffee filter into a clean glass bottle or jar. Press the sesame seeds gently with the back of a spoon to extract remaining flavored oil. Discard the spent seeds—they've given up their flavor.
Step 5. Label your container with contents and date. Store in a cool, dark place like your pantry. Use exactly like commercial sesame oil: 1 tablespoon for stir-fries, marinades, dressings, or finishing dishes. The flavor is concentrated, so start with less and add more as needed.

Storage

Store in a cool, dark place for up to 6 months. Refrigeration extends shelf life to 12 months but may cause oil to solidify—simply bring to room temperature before use. No preservatives means shorter shelf life than commercial versions.
