Instructions
Step 1. Soften the grass-fed butter by leaving it at room temperature for 2-3 hours until easily mashable with a fork. The butter should yield to gentle pressure but not be completely melted. This proper temperature (around 65-68°F) is crucial for proper emulsification.
Step 2. Gently melt the coconut oil in a small saucepan over lowest heat or in a double boiler until just liquid (around 76°F). Do not overheat as this can affect the final texture. If using a microwave, heat in 10-second intervals, stirring between each interval.
Step 3. In a food processor or high-speed blender, combine the softened butter, melted coconut oil, and olive oil. Process for 30-45 seconds until well blended. The mixture should look smooth and unified without any visible oil separation.
Step 4. With the processor running, slowly drizzle in the filtered water over 20-30 seconds. This gradual addition prevents the emulsion from breaking. Add the salt, nutritional yeast, and turmeric. Process for another 60-90 seconds until the mixture is completely smooth, light in color, and has increased in volume slightly.
Step 5. Scrape down the sides of the processor bowl and pulse 3-4 times to ensure even distribution. The final mixture should be pale golden, smooth, and have a soft, spreadable consistency similar to softened butter. Taste and adjust salt if needed.
Step 6. Transfer the spread to a clean glass container or silicone mold. Smooth the top with a spatula and cover tightly. Refrigerate for 2-3 hours until firm but still spreadable. The spread will continue to firm up over the first 24 hours as the oils fully set.
