Instructions

Step 1. Preheat a heavy-bottomed pan or cast iron skillet over medium-low heat (around 275°F). Add 60g (1/2 cup) organic sesame seeds and toast for 3-4 minutes, stirring constantly with a wooden spoon. Seeds should turn golden and release a nutty aroma - be careful not to burn as they go from perfect to burnt quickly. Remove from heat immediately when aromatic.
Step 2. Transfer toasted seeds to a clean, dry 16oz glass jar with tight-fitting lid. Pour 440ml (1.85 cups) room temperature organic avocado oil over the warm seeds. The warmth helps release oils from the seeds. Seal jar tightly and shake vigorously for 30 seconds to distribute seeds evenly throughout the oil.
Step 3. Let the mixture infuse at room temperature for 24-48 hours, shaking the jar 2-3 times daily. For deeper flavor, you can infuse up to 1 week. The longer infusion creates more intense sesame flavor - taste test after 24 hours and continue as desired.
Step 4. Strain the oil through a fine mesh strainer lined with cheesecloth or coffee filter into a clean glass bottle or jar. Press the sesame seeds gently to extract maximum flavored oil. Discard the spent seeds or save them for sprinkling on salads.
Step 5. Store in a cool, dark place or refrigerate for extended shelf life. Use 1-2 tablespoons (~14-28g) for stir-frying chicken fried rice, or anywhere you'd use sesame oil. The oil provides the same high heat cooking properties as regular sesame oil with authentic flavor.

Storage

Store in refrigerator for up to 6 months or pantry for 3 months. Oil may solidify when cold - simply bring to room temperature before use. Shake before each use as natural separation may occur.
