Instructions
Step 1. Preheat a heavy-bottomed pan or cast iron skillet over medium-low heat (around 275°F). Add 60g (1/2 cup) organic sesame seeds and toast for 3-4 minutes, stirring constantly with a wooden spoon. Seeds should turn golden and release a nutty aroma - be careful not to burn as they go from perfect to burnt quickly. Remove from heat immediately when aromatic.
Step 2. Transfer toasted seeds to a clean, dry 16oz glass jar with tight-fitting lid. Pour 440ml (1.85 cups) room temperature organic avocado oil over the warm seeds. The warmth helps release oils from the seeds. Seal jar tightly and shake vigorously for 30 seconds to distribute seeds evenly throughout the oil.
Step 3. Let the mixture infuse at room temperature for 24-48 hours, shaking the jar 2-3 times daily. For deeper flavor, you can infuse up to 1 week. The longer infusion creates more intense sesame flavor - taste test after 24 hours and continue as desired.
